Just tried this recipe i got out of cook book last night and it is sooo delicious. You marinade salmon in lime juice , garlic , chilly , lemongrass and honey !.. then you quick stir fry it and its is really really good , tastes alot like blackend cod tates , sort of tangy and sweet at the same time.. Here is roughly what you do...
1. Take 2 salmon steaks ( i found organic salmon from m&s which is really nice and is all pale and natural looking ) and get rid of the skin and slice into strips
2. Grate two limes to get their rinds , then squeeze their juices out too into a bowl
3. Add 2 tablespoons of clear honey
4. Add chilli , garlic ( i used powder as i didnt have the real stuff)
5. Add two stalks of lemongrass
6, Mash it all up together as a marinade then add the salmon pieces to it , cover and put in fridge for as long as you can , i did 3 hours but they say overnight is best
7. Heat a wok , add some sesame oil ( not olive ) and quick stir fry the salmon after you have marinaded it
8. Serve with bok choi ( also lightly stir fried with sesame and garlic)
